Our Pigs

Our herd of purebred, woolly Mangalitsa pigs are a living piece of culinary history

This is the fabled lard-pig of the Austro-Hungarian Empire; an elite delicacy reserved for emperors, nearly lost to extinction as the modern world rushed toward industrial efficiency.

By preserving this rare breed in the heart of Missouri, we are bringing a legendary animal back from the brink. While commercial operations rush production, our Mangalitsas demand absolute patience, slow-growing for 15 to 20 months to develop their legendary complexity. They live exactly as nature intended: rotating through fresh pastures and foraging through deep timber. To achieve an unparalleled finish, they are sustained on a finishing diet of estate-grown winter wheat.

The result is the return of an ancient luxury:

Each bite is two years of care on the end of a fork that dissolves on the tongue like butter

At Mezöri Rezervát, our mission is simple: preserve heritage livestock, respect the land, and produce pork worthy of its ancestry. Every animal is raised with care and attention from pasture to harvest.

This isn't just pork. This is what pork forgot it was.
